Sauce – Tare

The original cutlet bowl was created by the Sancho-an (long-established soba noodle shop). However, Mr Nobukatsu Shibuya was not satisfied with the sauce used for this cutlet bowl either. The original sauce was made from ocean bonito base soup stock, but he believed soup sock made from pork would be the best match for pork dishes. He made the soup stock from the “Pork muscles”, which come out when cleaning pork meat, and onions. Along with this pork-based soup broth, we have added sweet cooking rice wine, enriched soy sauce and San-on-sugar, a mild “soft brown sugar” used for Japanese sweets, to enrich our special sauce for KATSUDON.
