A New Way to Enjoy the Night. Why You Must Experience “Kushi-katsu,” a Soul Food from Osaka, Japan!

Have you ever heard of “Kushi-katsu”? If you are a fan of our Tonkatsu, you are bound to fall in love with this new menu. Kushi-katsu is a beloved Japanese dish featuring bite-sized premium ingredients, skewered and wrapped in a delicate, crispy golden coating.

Originally born in the vibrant Shinsekai district of Osaka, Kushi-katsu is a celebration of variety. It is a highly versatile dish that features not only meats like pork and beef but also fresh seafood and seasonal vegetables, each fried to perfection on a single skewer.

At Ginza Bairin Hawaii, we have infused this casual traditional dish with the expertise and dedication we’ve cultivated over 20 years as Tonkatsu specialists.

The most distinctive feature of our Kushi-katsu is its incredibly light and delicate “breading.” By using our signature low-sugar panko and frying at the precise temperature, we achieve a texture as light as a feather—crispy on the outside while keeping the natural flavors juicy on the inside. This non-greasy crunch is so addictive, you won’t be able to stop at just one!

The way to enjoy it is simple yet iconic: dip the entire skewer into our savory Worcestershire-style sauce and eat it while it’s piping hot. Just remember the golden rule of Japanese Kushi-katsu culture: “No Double-Dipping!”

Our Late-Night Service, which launched on February 9th, allows you to order these skewers individually to suit your appetite. Paired with a chilled beer, a refreshing highball, or a crisp glass of sparkling wine, it is the ultimate way to wrap up a beautiful night in Waikiki.

As we celebrate our 20th anniversary, Ginza Bairin is proud to introduce this “new yet nostalgic” experience. Come and enjoy the delightful textures and savory aromas of our Kushi-katsu while sharing a wonderful evening with your loved ones in the heart of Hawaii.
